Dining at Fontainebleau is a tour in itself, with the only problem you’ll face is having to decide where to try. Among the countless offerings in the hotel, our favourite choice has to be Chyna Club. Located on the first floor, the restaurant serves contemporary Cantonese cuisine in a jewel-toned setting that strikes the right balance between drama and intimacy. The Peking duck is a standout, paired beautifully with cocktails that play as much on presentation as flavour. 

After dinner, we couldn’t help but venture into Azul to try its signature mezcal and tequila cocktails. Inspired by mezcalerias of Mexico, the lounge surrounds you with desert sunset hues and moody lighting, setting the scene for a seductive nightcap.

Though Las Vegas is never lacking in entertainment, the true surprise of the Fontainebleau experience may be how little one feels compelled to leave the building. That said, a handful of moments are worth the detour. The Vegas Views Tour with Maverick Helicopters delivers one of those rare, cinematic experiences that lingers. Soaring above the neon-drenched Strip as the sun slips behind the desert mountains, the city transforms into a glittering circuit board.

If it’s a memorable show you are looking for, watching ‘O’ by Cirque du Soleil felt like diving into a dream. The show performed at the Bellagio is an incredible blend of stunning water acrobatics, graceful performances and visuals that leave you completely spellbound. After the show, take a short stroll to LPM Restaurant & Bar at The Cosmopolitan of Las Vegas, where its artfully curated Mediterranean menu blends European charm with Vegas Glamour.

FEW PLACES on Earth are as idyllic as Prince Edward Island, Canada’s smallest province.

Prince Edward Island, also referred to as “PEI” by locals, is widely known as the home of Anne of Green Gables, but the island is just as celebrated for its iron-rich sandy beaches, endless lobster supply, clapboard cottages, and the warmth of its people.

We commence our adventure on the island with a stop at Mysa Nordic Spa & Resort – a serene resort nestled on the banks of St. Peters Bay. Boasting 18 acres of lush natural landscape, Mysa Nordic Spa & Resort is an excellent spot to absorb the surrounding wildlife and settle into island life.

This wellness destination harnesses the power of a fully renewable resource to power its spa facilities, which include various saunas, a eucalyptus steam bath, a cold plunge bucket, a relaxation room, and more. We set aside a few hours to drift between the spa’s amenities, letting the rhythmic cycle of heat and chill dissolve any tensions or worries.

Just a stone’s throw away from Mysa Nordic Spa & Resort is Greenwich Beach, one of Parks Canada’s most serene locations. Greenwich is home to the biggest parabolic sand dunes on Prince Edward Island, which play a crucial role in protecting the island from coastline erosion. Here, we enjoy a scenic hike and learn more about Greenwich’s important connections to Mi’kmaq and Acadian culture.

During the hike, it’s easy to notice an abundance of the violet wildflower known as Fireweed. Alongside goldenrod, this flower paints the natural landscape with blushes of colour, amongst other towering plants such as wild raspberries, sugar maple trees, blue-bead lilies, and much more.

As we wander along Greenwich’s meandering paths, the island’s quieter residents make themselves known. A chipmunk darts up a tree, pausing to eye us curiously before vanishing into the wilderness, while a beaver tends to its waterside den, leaving subtle ripples in the water adjacent to Greenwich’s floating boardwalk.

Taking a hike is an excellent way to destress; however, we also try forest bathing for even deeper relaxation. Nature Space Resort offers such experiences, where guests are guided on a tour through one of the resort’s verdant nature trails. Rooted in Japanese philosophy, forest bathing is a way to improve mental health and decrease stress hormone levels by moving through the woods at a slow pace.

Prince Edward Island boasts an array of nature’s most delicate and fragrant plant life, much of which is incorporated into the island’s cuisine. To experience some of the island’s signature dishes, The Fireworks Feast at The Inn At Bay Fortune spotlights some of the local, authentic, organic produce. Spearheaded by Chef Michael Smith, the feast takes guests on a culinary journey with menu highlights including freshly caught oysters, seafood chowder, smoked beef brisket, and raspberry mousse.

For another authentic Prince Edward Island culinary experience, the casual, coastal dining destination, FiN Folk Food, does some of the island’s most famous lobster rolls. We dine at FiN Folk Food, then take a two-minute walk over to Harry’s Dairy Bar, where we enjoy some of the freshest soft-serve ice cream on the island as a post-lobster roll sweet treat.

Overlooking both Harry’s Dairy Bar and FiN Folk Food is The Hotel AcadiaBlackbush Beach Resort’s hospitality hub. Arriving at the hotel, a yoga class at The Space Movement Studio sets the tone for a relaxing afternoon, followed by a visit to the hotel’s hot tub and sauna. Blackbush Beach Resort is the newest coastal resort on Prince Edward Island, so expect all your favourite creature comforts when visiting here.

The next morning, we make our way to Charlottetown, the island’s bustling capital. Rich in history and culture, Charlottetown is an impressive city full of timeless landmarks, lively streets, and warm maritime charm. Cafés and oyster bars spill onto the sidewalks, their tables full of locals sipping coffees and exchanging greetings, while independent shops and local businesses offer glimpses into the island’s creative scene.

There are endless things to discover in Charlottetown. We explore what the city has to offer with a Secrets of Charlottetown walking tour, a lobster cruise led by Top Notch Charters, and a laid-back stroll admiring the local shops. One of the city’s historic landmarks is The Great George, a lovingly restored boutique hotel where 5-star heritage buildings meet contemporary refinement.

It’s a fitting finale to our Prince Edward Island visit. From wellness retreats and windswept beaches to unique culinary experiences and cultural hotspots, Prince Edward Island reveals a timeless elegance that lingers long after you leave.

Designed by acclaimed studios Productora and Esrawe, the hotel leans into clean lines and natural textures: pale wood, volcanic stone, concrete, and ceramic, all composed with a precision that feels effortless. From the moment one enters, the hotel plays with light and temperature. Sunbeams filter through louvered screens. Garden shadows stretch across textured walls. Steps and terraces guide you with breeze and birdsong, creating a rhythm distinct from the colonial pulse just a few minutes away. The city, with its parades and music and markets, is within easy reach—but here, it’s kept at arm’s length, as if to offer the guest a breath between chapters.

The suites are designed with real-life in mind. Spacious without excess, warm without clutter. Textures are quiet—linen, cotton, matte ceramic—and the colour palette feels tuned to the earth. From the floor-to-ceiling window, lavender grows below. From the bed, the world feels softened, as though wrapped in cotton gauze. It’s easy to rest here—to unfold your clothes, your thoughts, and find there is room for both.

For couples traveling with layers of wardrobe and the shared choreography of suitcases and rituals, this space works. There’s a functionality to the suite that is rare especially when design often forgets how people actually move.

The public areas echo this gentle clarity. A botanical garden planted with native succulents and cacti surrounds the property, offering quiet encounters with Mexico’s arid landscape, where a pool mirrors the shifting sky. At sunset, the terrace becomes a theatre of oranges and pinks as the city catches the last warmth of the day.

And yet, for all its beauty, Albor never insists on itself. Its elegance is quiet. Its gestures are architectural but not performative. There are no chandeliers vying for attention, no gold-edged statements of wealth. Instead, there’s mood. Light. Texture. And space—perhaps the greatest luxury of all.

The service is thoughtful, with staff who intuit when to offer guidance and when to let you drift. Conversations unfold slowly, and there’s the sense that everyone working here believes in the space they’ve created.

Designed by leading Latin American architects Sordo Madaleno Arquitectos of Mexico City, the landscape and buildings flow seamlessly into one another and incorporate natural techniques to reduce energy consumption such as living rooftops to reduce interior temperatures and local flora to reduce water consumption.

The resort has already been awarded the prestigious Costa Rican “Bandera Azul Ecológica” award which recognises the effort of organisations seeking to improve environmental conditions.

The resort boasts six regionally-inspired dining experiences, each offering modern takes on the flavours and traditions of the Guanacaste province. All food outlets are overseen by award-winning Executive Chef Nicolas Piatti, recognised as the Food Waste Champion of the Americas due to his commitment to sustainability and waste reduction, and Food and Beverage Director Ana Martinez.

Both prioritise sourcing local ingredients from small-scale farmers, fishermen and nearby plantations to ensure that every dish narrates the story of the land, the people and the rich cultural heritage of the region.

The 17,000 square foot state-of-the-art spa also features a fitness centre and private pool.

It’s clear that 1 Hotel West Hollywood takes great pride and care in knowing where their ingredients come from.

WALKING down the cobblestone streets between industrial buildings of boutiques and restaurants, it’s not hard to see why Tribeca has become a prevalent area of New York city.

It’s a dramatic change of scenery from skyscraper central, it’s cool, artistic and fashionable, and Fouquet’s New York blends seamlessly into the neighbourhood.

The red-bricked establishment is tucked on a corner of the quiet district, and behind this façade you’ll find a haven radiating with Parisian elegance from the moment you walk in. 

Adorned in green and lavender hues, the hotel features 97 residential-style rooms and suites by world-renowned designer, Martin Brudnizki. I’m welcomed into my Deluxe King room with bright sunlight pouring through the floor to ceiling windows. Art-Deco inspired furniture, grand quilted headboards and carefully curated art pieces decorate my abode, along with a magnificent marble bathroom that you’d want in your own home.

If you’re able to drag yourself away from the sanctuary of your room, the ground floor is home to the vibrant Fouquet’s Brasserie.

Under the guidance of Michelin-starred Chef Pierre Gagnaire, the menu offers a gourmet experience of Parisian classics with a New York twist. I’m told it’s also a favourite among the locals of downtown Manhattan, and don’t be surprised if you bump into any star-studded diners.

Promising to continue your evenings in style is the Titsou Bar, a sophisticated speakeasy hidden within the guest reception. Serving exquisite cocktails and with a 1920s ambience, it feels like you’ve travelled back in time. Or if you’d prefer to sip cocktails with unobstructed views of downtown Manhattan, rooftop Le Vaux is designed for just that.

Other amenities of range from Spa Diane Barrière with a pool and personalised treatments, to state of the art Cannes cinema with plush seating in shades of gold – an extension of the property’s iconic Art-Deco aesthetic, blending Parisian panache with Tribeca cool. Fouquet’s New York delivers sophisticated hospitality on an intimate scale, befitting its location in the city’s most coveted neighbourhood.

WHEN it comes to Southern charm, San Antonio’s Hotel Emma basks in all of it.

Housed in a former 19th-century brewery along the Pearl District’s River Walk, this Texas establishment has masterfully preserved the industrial heritage of its past. Still standing proud with the original brickwork, iron detailing and even blending the old fermentation tanks into the design, the eclectic backstory of the place hasn’t been lost.

Despite the rustic feel to its exterior, the interior boasts an industrial chic – think exposed walls, steel beams and polished concrete floors – mixed with elegantly tiled bathrooms with claw-foot bathtubs, beaming natural light highlighting four-poster beds, and pops of colour weaved into the curtains, cushions and blankets.

Each one of the 147 rooms was designed by Roman and Williams to encompass its own personality, but they all share one thing – you are welcomed into your suite with a special La Babia Margarita. Not a bad way to check in! 

Rooftop pool

With the summer months peaking close to 40°C, the saving grace of exploring a city in this heat is Hotel Emma’s rooftop pool. With a resident bartender never being too far away, you can enjoy one of its house cocktails from an enviable height, enjoying a view many would pay for. 

Bedroom

When it comes to food, you don’t mess with Texas and Hotel Emma is certainly proof of that. The flagship restaurant, Supper, has a reputation that precedes itself. The menu takes local flavours and reworks them into an elevated array of favourite home dishes. Created as a farm-to-table experience with seasonal twists, like crispy smoked quail, Angus beef fillet and local tomato salad, it is definitely worth securing a table. 

Lobby

For a casual bite to eat, I recommend Larder, which provides baked goods and an excellent cup of coffee. But don’t miss out on a late-night craft drink at Sternewirth, the hotel’s bar. Situated in the former engine room of the factory, this place has attracted guests from all over the world as much as locals with its soaring high ceilings and rich ambience. Soaked in authenticity from top to bottom, Hotel Emma savours its past to create a strikingly good present.

THE Ancient Mayans called it Sian Ka’an—“where the sky is birthed”. I call it “that place I can’t stop thinking about.” 

Located on a UNESCO World Heritage Site, totally secluded in the heart of Mexico’s Mayan Riviera, I arrived by way of a blue fishing boat. Its captain, a local fisherman, navigates the labyrinth of winding mangroves that make up this immense bioluminescent lagoon; he knows the landscape like the back of his hand. The Mexican breeze felt like it was cleansing me with occasional splashes of water that cool my skin from the warmth of the sun. A smile from ear to ear: I’d seen Casa Chablé in pictures, but I wasn’t expecting this.

The property stands gracefully over the landscape, a beautiful contrast with its surroundings. The architecture is a delicate balance of modern elegance and respect for nature – its design thoughtfully integrated into the lush foliage. 

The exclusivity of Casa Chablé – five bungalows, five guest rooms, and five rooms in the Main House – ensures that every detail is meticulously attended to by its dedicated team of twelve staff members. Living on property due to the hotel’s remote location, they become recurring characters, adding comfort and intimacy to guests. They masterfully manage to be both unobtrusive and incredibly attentive, creating an atmosphere where one feels both secluded from the world while being deeply cared for.

The warmth of Casa Chablé extends well beyond the initial welcome. At its restaurant, K’ÚUM, I learned how to cook fresh salsa in a cooking class with Chef Luis León. But I didn’t just learn how to smash tomatoes. Chef dove me right into the rich tapestry of Mexican cuisine and cooking techniques – like the physical and chemical properties of using a molcajete – deepening one’s understanding of the local culture. And that’s only the beginning.

As day turns to night, Casa Chablé adds personalised touches that make each evening unforgettable. After a four-course dinner under a blanket of stars, I followed a lantern-lit path down to the shore to a telescope, where I counted constellations. Gazing through the lens out into the universe, I found myself thinking back on the ancient Mayans who once navigated these very Caribbean waters, using these very stars: a celestial map guiding their voyages across the sea.

These intimate, personalized touches make each day at Casa Chablé feel special, creating memories that linger long after you’ve returned home. A shower under moon or sunlight, right there from your villa. The soundtrack? The rustle of palm trees and waves crashing at the shore. I miss that.

One of the most transformative experiences at Casa Chablé is the sound bath. Lying on a wooden deck, the singing bowls’ gentle harmonic frequencies are designed to resonate into every water molecule of your body. The wood planks below me seemed to vanish; I floated on water as the humming of the bowls swirled around me, surrounding me with a profound sense of peace.

The Sian Ka’an Biosphere, with scores of hidden Mayan structures, is unforgettable. Casa Chablé’s commitment to sustainability – 80% of its energy is solar, for instance –  and environmental respect means that your stay is not just luxurious but also mindful of its impact. The balance of opulence and eco-consciousness creates a unique sanctuary where you can fully immerse yourself in the serene beauty of the Mayan Riviera.

I keep thinking about the Mayans – about their claim that this sacred place is where the sky itself came into existence. It feels like standing at a threshold, caught in the in-between. Between the bioluminescent bay and the Caribbean Sea; between luxury and sacred land; between awe and fantasy; and between the comforts of modernity and the ancient spirituality of centuries ago.

Despite its position in the Financial District, the Four Seasons Hotel New York Downtown is far from being a business hub. In fact, I would argue the opposite. It’s home to one of the best spas in the south of the city with amenities including a whopping 75-foot pool, infrared sauna and IV therapies.

On top of an extensive range of beauty treatments from expert brands like 111Skin, Omorovicza and Augustinus Bader, from classic facials to targeted bodily massages, you name the issue, they’ll name the treatment.

Going back down to the lobby, a stop off you must try is CUT by Wolfgang Puck – a very East meets West crossover. Spearheaded by the Californian chef, this is Puck’s first Manhattan outpost where he brings a touch of clean cuisine to the city with an impressive array of Wagyu steaks for mains counteracted with a fresh seafood raw bar to start. 

Despite the business casual ambiance, this is the Four Seasons. Expect luxury and unwavering hospitality – and remember to enjoy the view.

THERE ARE different ways to reach Machu Picchu, the single biggest tourist attraction in South America, and one of them involves campsites and four days of serious trekking. This may not be everyone’s cup of tea, even though the citadel’s mist-shrouded appearance at sunrise must be a sensation.

Arriving there on a luxury train while sipping a hot beverage in a real cup has its own merits. Scenes of agricultural life – alpacas and fields of corn amidst surrounding mountains –  glide past through the windows of your chugging  train and, on the return journey, music from a three-piece live band  and  a cocktail or two constitute ludic relaxation after a long’s day’s sightseeing.

Superb accommodation at Rainforest Experditions

Seventy kilometres from Machu Picchu lies El Valle Sagrado (Sacred Valley) and – this is a minority opinion – its scenery and sites were for me a more evocative introduction to Inca civilisation than Machu Picchu itself. Lunch in the valley at Unu Restaurant, an isolated spot by an ancient church and enwrapped by the Andes, comes close to the sublime – and then there is Cusco, over 300m above sea level and once the capital of the Inca empire.

The place to stay in Cusco is Monasterio. Spanish colonial architecture is central to the city’s appeal and Monasterio, occupying a 16th-century monastery, has a gorgeous share of this with its archways, cloistered courtyard and escutcheons. Breakfast at a table in one of the cloisters is a tranquil and memorable start to a new day.

Near to the hotel is a restaurant, Morena, delightfully overlooking Cusco’s main square and the cathedral, and the authentic Peruvian cuisine is superior to most eateries in Cusco.

Relaxing under a datura at Atemporal

Far more than half of Peru is covered by tropical forests, part of the Amazon rainforest, and it can be experienced in enviable comfort with Rainforest Expeditions. Their deluxe suites, complete with a private terrace and outdoor tub and shower, add cosiness and class to a stay deep in the rainforest.

The excellent guided walks introduce you to howler and squirrel monkeys, poison dart frogs and much more. The amazing birdlife includes hearing hysterical wolf whistles from the screaming phia. Plus, wait for it, walking trees (Socratea exorrhiza): palm trees that move from shade to sunlight by growing roots in a preferred direction and replacing the old roots that lift into the air and wither away.

Lima, Peru’s capital, is best left for your final days in the country. The road there from the airport is uninspiring and the city looks a sprawling mess until you settle down at a table in Cala and take in the spectacular location. You are seated on a terrace above a large beach where waves of the Pacific Ocean are ridden by surfers.

The restaurant’s signature appetizer is a tower of cold seafood – ceviche, prawn, razorshells, crab legs and octopus  – to be relished as part  of a lazy lunch or, come evening time, while watching the sunset and listening to the pounding of waves on the stony beach.

Chic stays at Fausto in Miraflores

Peruvian cuisine is rightly rated one of the best in the world and Lima is its crucible where chefs are making a reputation for themselves by creatively utilising a wealth of indigenous ingredients. The country has food from coastal, mountain and jungle ecosystems, allowing very different regional specialities to be combined with four centuries of mostly Spanish food influences from Europe. The results are exciting and, in some of the top restaurants, simply fabulous.

Dancing before boarding a train to Machu Picchu

Central is the restaurant in Lima widely regarded as one of the very best in the world, with three Michelin stars and ranked as number one in The World’s 50 Best Restaurants list. This could mean reserving a table before even booking a flight to Peru. Upstairs is Kjolle, where chef Pía León, the wife of Central’s chef, and a visit here should prove to be a gastronomical highlight of time in the country.

The setting is as minimalist and earthy, the only decorations being framed plant leaves behind the sleek counter that runs the length of the dining space. What you sit on and eat from is crafted from Amazon rainforest wood and everything you eat is 100% Peruvian, though a concession to neighbouring countries is made with the wines (good luck with finding an exceptionally good wine from Peru).

The tasting menu will bring ingredients to your table which you’ve never heard of – some are extraordinary – and the beef rib is peripheral to what is essentially one of the most ingeniously refined non-meat menus anywhere in the world.

Some consideration needs to be given to where you stay in Lima. The district called Miraflores is popular and convenient for nightlife, shopping and parks while Barranca is gaining attention as a more laid-back neighbourhood where neglected colonial-era mansions lend an air of faded elegance.

Many of the bars and restaurants have a bohemian appeal but good hotels in Barranca are thin on the ground while Miraflores has the charming Fausto. Situated in a quiet, tree-lined residential area within walking distance of the city centre. The five differently-sized rooms (pequeña, mediana, grande) are all stylishly decorated – go for the grande for the extra space – and the courtyard is a lovely spot for breakfast where, being partly open, humming birds fly in for their own morning repast courtesy of the potted plants.

A small open kitchen and a honesty bar add to the appeal and comfort of enjoying some quiet luxury in the heart of a capital city. Fausto’s sister hotel, Atemporal, is just as lovely and in the same neighbourhood.

A short walk from Fausto takes you to La Gloria, a bar and restaurant which would surely become your local if living in Miraflores. The cosy bar, like the one that gave its name to the television series Cheers, is where everyone would know your name – people come to La Gloria just for drinks, tapas and (open until 2am) maybe a dance or two.

The restaurant, with work by the important Peruvian photographer Ferando La Rose on the walls, is a gem of a place for fish dishes like  tuna fish tataki with ajo blanca and Chorrillane fish stew.
