From the moment guests enter the grand lobby, the atmosphere feels curated rather than constructed. The hotel’s 3,644 rooms and suites are swathed in oceanic blues, muted silver tones and hints of coral, each one exuding sophistication. 

In terms of accommodation, the Fleur de Lis Suites stand apart. A favourite for those seeking privacy and polish, it offers expansive living spaces and dedicated butler service. Even the in-room comforts beckon a refined sensibility, with high-thread-count linens and custom-scented bath amenities tucked neatly beside plush towels.

Dining at Fontainebleau is a tour in itself, with the only problem you’ll face is having to decide where to try. Among the countless offerings in the hotel, our favourite choice has to be Chyna Club. Located on the first floor, the restaurant serves contemporary Cantonese cuisine in a jewel-toned setting that strikes the right balance between drama and intimacy. The Peking duck is a standout, paired beautifully with cocktails that play as much on presentation as flavour. 

After dinner, we couldn’t help but venture into Azul to try its signature mezcal and tequila cocktails. Inspired by mezcalerias of Mexico, the lounge surrounds you with desert sunset hues and moody lighting, setting the scene for a seductive nightcap.

Though Las Vegas is never lacking in entertainment, the true surprise of the Fontainebleau experience may be how little one feels compelled to leave the building. That said, a handful of moments are worth the detour. The Vegas Views Tour with Maverick Helicopters delivers one of those rare, cinematic experiences that lingers. Soaring above the neon-drenched Strip as the sun slips behind the desert mountains, the city transforms into a glittering circuit board.

If it’s a memorable show you are looking for, watching ‘O’ by Cirque du Soleil felt like diving into a dream. The show performed at the Bellagio is an incredible blend of stunning water acrobatics, graceful performances and visuals that leave you completely spellbound. After the show, take a short stroll to LPM Restaurant & Bar at The Cosmopolitan of Las Vegas, where its artfully curated Mediterranean menu blends European charm with Vegas Glamour.

Even when plans shift, as they often do in Vegas, the comfort of this property makes spontaneity feel like a luxury. Between its six-acre pristine pool district, luxury fitness centre, Lapis Spa & Wellness, a curated mix of retail and dining and an in-house casino, Fontainebleau offers both escape and immersion.

LONDON nights are made for rooftop cocktails, golden-hour views and buzzing energy, and the Courthouse Hotel Shoreditch delivers all three. Add in generous rooms, a stellar location, and a breakfast spread that feels like a treat, and you’ve got a stay that hits all the right notes.

For my stay, I checked into one of the hotel’s Shoreditch Sky Terrace Suites, a space that feels more like a chic city apartment than a hotel room. With modern finishes and so much room to breathe, it was the kind of suite that invites you to unpack fully and live in it – rather than just pass through. Floor-to-ceiling windows poured in natural light as well, creating the perfect backdrop for both lazy mornings and pre-evening prep.

The suite’s real showstopper, though, was its private entry bridge to the Upper 5th rooftop bar. It felt like having a secret key to one of Shoreditch’s best social spots, with the ability to drift effortlessly between the lively rooftop scene and the quiet luxury of our suite whenever the mood struck. One moment it was skyline cocktails and music, the next it was back to plush interiors and total calm. It gave the stay a sense of exclusivity that’s rare in London.

Step outside the hotel and Shoreditch itself picks up the story. This pocket of East London has become one of the city’s most dynamic neighbourhoods, full of contrasts, graffiti walls and gallery spaces, vintage markets, and designer pop-ups. Staying here means being surrounded by energy and creativity, with Old Street and Liverpool Street stations close by if you want to venture further.

Come morning, the pace slowed. The breakfast buffet set the tone with an abundance of choice, traditional English fry-up favourites, fresh pastries, fruit, juices, and barista coffee, the kind of spread that makes it easy to linger over seconds (and thirds). It was a reset before diving back into the city.

And for when you want to retreat from the outside world altogether, the Courthouse Hotel has plenty to keep you occupied: a spa with indoor pool and steam room, a private cinema, even the playful touch of a boutique bowling alley. Every corner of the hotel seems designed to surprise, reminding you that it’s much more than just a base.

The Courthouse Hotel Shoreditch is indulgent without ever feeling over the top, and stylish without trying too hard. For those who want to experience East London in all its vibrancy, and still have a private rooftop bridge waiting at the end of the night, it’s a seamless mix of city energy and laid-back luxury.

ANGLOTHAI isn’t just another exciting new restaurant in London, it’s the culmination of a life lived between cultures. Opened in late 2024 by Chef John Chantarasak and his wife, Sommelier and Creative Director, Desiree Chantarasak, AngloThai has already earned a Michelin star and a devoted following, and it’s easy to see why.

The quietly striking space on Seymour Place is home to food rooted in Thai culinary tradition, yet refracted through a distinctly British lens. Influenced by John’s mother, a gifted home cook who went to great lengths to source specialist ingredients that reflected her family’s tastes, the menu is built on traditional Thai methods: charcoal grilling, coconut smoking, and the searing intensity of wok-hei. These techniques paired with the best seasonal produce from across the British Isles, create dishes that are both deeply familiar and subtly unexpected.

Settling in by the window, I find myself admiring the delicately curated space — warm with soft lighting, touches of emerald greenery, and bespoke art and contemporary crafts from Thai artists whom John and Desiree personally meet on their travels to Chiang Mai.

Seated on furniture handmade from chamchuri wood, I can feel the buzzy atmosphere; from the faces in the crowd, it’s clear everyone is enjoying themselves, dish after dish, and I can’t wait to get started.

The tasting menu is a progression of bright, bold, and deeply aromatic flavours, but we begin off menu with a velvet crab, fish bone and eel tom yum-style broth, so fragrant it works perfectly as an appetite ignition.

Wines ‘Rufus’ and ‘Aubretia’

Accompanying my starters is a glass of ‘Aubretia’, an aromatic white wine with tropical notes, and recommended with main courses is the light-bodied red ‘Rufus’, easy choices after discovering they are affectionately named after Desiree and John’s two children.

A complex trio of amuse-bouche follows, presented on thoughtfully crafted plates by Matt Jones Ceramics. Starting with Kohlrabi, Candied Beetroot & Duchess Rapeseed as instructed, then the Line Caught Mackerel on top of Rhubarb & Horseradish encased in a crispy tartlet case – a medley of flavours and textures. Next is the Fosse Meadows Chicken, covered in a rich Coconut Golae sauce and finished with pickled mooli and chilli, it’s a blend of spicy and sour, with the sweetness of coconut.

The delicate brown crab emulsion crowned with elderflower gel and glistening pearls of caviar over sweet white crab meat is a visual delight and made an indelible impression on me.

From there, signature plates like British Octopus with Chilli Jam & Courgette, and the Ryall Farm Hogget, Câr-y-Môr Cockles & Herb Curry show off not only AngloThai’s bold flavour profile, but its deep commitment to sustainable sourcing and local farming. Even the rice, often flown thousands of miles is replaced by heritage British grains, for me, barley accompanies my main course.

Another highlight of the evening is the honey butter Brioche, pillowy soft and an excellent pairing with the 28-day aged Beef Tongue Jungle Curry — mouthfuls that both comfort and thrill.

Desserts carry the same creative precision, and we are first presented with a palate cleanser. The Blackcurrant Leaf–infused ice cream glossed with Long Peppercorn Oil, with reduced Beetroot with Strawberry could have stood alone as a dessert, so beautifully balanced and amplified on flavour, the first spoonful left me speechless while my guest mouthed the word ‘wow’.

A duo of desserts arrives at our table, spotlighting Strawberry, Grachai & Coconut Flan. To finish is the Kanom Lek, a raspberry jelly dusted with sugar, pink and Sichuan peppercorn, and chilli flakes, finished with a playful dab of tamarind gel, ending our culinary voyage on a sweet note.

There’s a confident duality that runs through every part of the AngloThai experience, East and West, old and new, bold and subtle. The result is a restaurant that feels like a true extension of its founders: inventive, heartfelt, and completely original. It’s clear this is a space where everything means something. And in a city that often prizes hype over heart, AngloThai is a reminder of what can happen when both are given room to shine.

ARRIVING at Penha Longa Resort means winding through the dense, emerald folds of the Sintra-Cascais National Park. The hotel appears as a flash of pale stone, contrasted amongst the greens of pines and endless golf courses feels like I’ve been transported into another world.

The 14th-century monastery appears almost suddenly. Arches, cloisters, and bell towers rising from manicured lawns, a scene as serene now as it must have been when monks first settled here in 1355. Today, 16th-century stone floors, and golden church altar stand alongside elegant lounges and terraces, the old and the new woven seamlessly together. After seeing the space turn into a wedding venue for the weekend, I’ll be adding Penha Longa to my destination wedding list.

My suite, part of the hotels lighter and brighter renovation, carried that same balance of heritage and modern comfort. A palette of soft green, ocean blue and earthy brown echoed the landscape beyond my terrace. The furnishings were light and contemporary, oversized king bed, spacious living area and a marbled bathroom make up my spacious suite.

It’s easy to make a case for Penha Longa as a gastronomic destination. Seven restaurants cover a spectrum from poolside snacks to Michelin-starred artistry. The most memorable is dinner at Midori, Portugal’s only Michelin-starred Japanese restaurant. The name means green, and here it nods to the surrounding park.

Presented with the Kiri menu, we enjoy a procession of plates alongside a view of the stunning Sintra Mountains. The menu offers a wide variety of dishes, each course felt like a small celebration, with an infused taste of Portuguese and Japanese flavours.

Starting with Hassun, a selection of playful bite-sized appetisers. Then Omiotsuke, a Portuguese stew reimagined as miso-shiro, was deeply comforting, and sushi was a highlight: striped prawn nigiri, turbot brushed with fig tree leaf, and buttery chutoro tuna. Dessert, Dezato, brought sakura, almond and cherry together in a sweet, airy finale.

Another evening, I settled into LAB by Sergi Arola, where we journey with a ceramic cockerel taking us on an edible tour of the country, Portuguese tapas is served at every stop on the map carved table. The tasting menu that follows brought refinement and surprised with every course.

Days have a way of stretching at Penha Longa. Golfers moved between the 18-holes on the Atlantic Championship Course, while the smaller Monastery Course offered a gentler pace for those new to the game. The Penha Longa Spa & Wellness became my early retreat, waking up with morning yoga in the zen-inspired garden before heading in for my personalised massage, where my masseuse Monique knew exactly how to release all the tension I had.

If exploring local towns is part of your travel ritual, Cascais is well worth the short drive from the hotel. Often referred to as the Portuguese Riviera, this charming coastal town draws both visitors and locals with its relaxed elegance.

A guided tour with Visit Cascais reveals the bay from the water and the cobbled streets on foot, each turn revealing a layer of the town’s history. Our walk led us to the lively farmers’ market, where stalls brimmed with handmade crafts, clothing, and an abundance of fresh local produce. From there, we headed west to Boca do Inferno and Cabo da Roca, the westernmost point of mainland Europe, to take in sweeping views of rugged cliffs and the Atlantic horizon before returning to the hotel.

Cascais

Penha Longa isn’t simply a place to stay — it’s a place to inhabit. Whether you come for the golf, the gastronomy, the spa, or simply to let the rhythm of the park set your pace, it leaves you with the rare sense of having lived inside a story, one still being written after more than six centuries.

MANCHESTER’S energy is impossible to miss, it’s a city that always feels in motion, and as I step off the train at Piccadilly Station, I was eager to dive in. Within a minute of leaving the station, I was standing at the doors of the Manchester Marriott Hotel Piccadilly — a perfect start to what proved to be an effortlessly enjoyable stay.

Recently refurbished, the hotel makes quite an impression even before stepping inside, thanks to its striking curved glass façade. Inside, the look is contemporary yet warm, with earthy tones and subtle nods to Manchester’s industrial and musical heritage woven throughout.

Winding down took no effort at all in one of the largest rooms I’ve encountered in a city-centre hotel. Spacious, blissfully quiet thanks to triple-glazed windows, and thoughtfully designed with a supremely comfortable bed and a sleek ensuite bathroom. It felt like a welcome retreat from the energy of the city outside.

I took advantage of the hotel’s well-equipped gym, which goes far beyond the usual hotel fitness room with its Matrix machines and generous space. Another highlight of the hotel is the new Afternoon Tea & Spa package. Starting with a blissful 50-minute Elemis treatment in the Elemis Spa’s calming surroundings, featuring six treatment rooms and a thermal suite. Afterwards, guests can enjoy delicate sandwiches, pastries, and a glass of Prosecco.

Hotel Restaurant

Manchester Marriott Hotel Piccadilly also offers bistro-style restaurant, led by Head Chef Tom Gardner, the menu promises dishes crafted from fresh, locally sourced ingredients. The adjacent bar also looked inviting, with a creative cocktail list and a relaxed atmosphere that would suit anything from a casual drink to a more celebratory evening.

Whether visiting for business or leisure, the Manchester Marriott Hotel Piccadilly combines an unbeatable location with spacious accommodation and touches of luxury. It’s a property that makes exploring Manchester both easy and indulgent, an address well worth remembering.

TUCKED amongst lunchtime eateries and busy local markets of Wan Chai, The Hari Hong Kong offers more than just a place to stay.

It’s one of those properties you don’t notice until you look up. Lush greenery and friendly greetings frame a warm welcome, and upon entering The Lounge, the space echoes a “home away from home” feeling. Taken over by colourful bookshelves, curated art, and inviting seats, every corner of the hotel conveys a subtle, confident charm.

The Hari Hong Kong Exterior

Opened in December 2020 and part of the Harilela family legacy, The Hari is the brand’s first venture into Asia following its London flagship. Designed by Tara Bernerd, the interiors layer petrol blue lacquer, rich timber, and plush velvets into a warm, contemporary aesthetic. The hotel’s creative spirit extends to its support for emerging talent through The Hari Art Prize, launched in 2023 to champion young Hong Kong-based artists, and it’s these that decorate the unique property.

The Lounge

Luxurious accents are seen in the guest rooms as well. Our stay in one of the One Corner Room features smart detailing, tactile textures, and a marble bathroom with a walk-in rainforest shower – creating a quiet, comfortable retreat above the city streets.

Dining is another cornerstone. Mornings at Lucciola, the hotel’s chic Italian restaurant and bar, unfold over beautifully plated classics served alongside a buffet, while evenings at Zoku offer a more theatrical experience. The contemporary restaurant on the second floor is inspired by Japan’s culinary culture, where dishes are served beneath an origami ceiling.

Adjacent to Zoku is The Terrace bar, framed by a soaring green wall. The space provides a refreshing contrast to the city’s urban pace, serving signature cocktails (my favourite being the Hari75) and delicious small plates in an al fresco setting – I could have easily spent the whole day here sampling the extensive menus.

Service throughout is polished, intuitive, and never intrusive. Whether returning from a gallery visit or an evening out, The Hari maintains a calming presence in the loud streets of Wan Chai, always composed and always welcoming. The team shared their knowledge and advice when it came to navigating Hong Kong, most helpful was Sugus who answered my curiosities about both inside and outside The Hari, having her expertise on local recommendations made my experience of the city much more seamless.

When it comes to travelling far from home, comfort and reliability are what many look for. At The Hari Hong Kong, the property stands out not just for how it looks, but how it makes guests feels.

The hotel’s 285 rooms and suites offer sweeping city views through floor-to-ceiling windows, framed by reclaimed wood, earthy textures, and in-room greenery. Thoughtful touches are in abundance, with yoga mats in every room, organic cotton linens, in-room greenery, and chalkboards in place of notepads — a nod to the brand’s rigorous sustainability ethos.

Dining here leans heavily into local produce. At 1 Kitchen, Culinary Director Ginger Pierce crafts vibrant garden-to-table dishes using produce from the hotel’s own organic garden and nearby farms. Pierce has joined the West Hollywood team to enhance the garden-to-table menu to feature a number of zero-waste dishes along with new highlights such as vegetable melt, super food salad, vegan yogurt & homemade granola, house made chick pea burger and much more.

The Lobby Farmstand offers guests, and locals fresh fruit, granola, and snacks daily, underscoring the property’s connection to its community and environment. Menus feature the multitude of seasonal organic produce, sourced directly from family owned farms such as Weiser Family Farms, and 2 Peas in a Pod. It’s clear that 1 Hotel West Hollywood takes great pride and care in knowing where their ingredients come from.

Harriet’s Rooftop

Among the hotel’s standout amenities is Harriet’s Rooftop, an elevated cocktail lounge with panoramic city views and a scene that glitters after dark. Wellness takes centre stage at the Bamford Wellness Spa, offering holistic treatments rooted in natural botanicals, while the rooftop pool deck and the landscaped Canyon walkway bring pockets of tranquility into the urban surroundings.

Housing olive trees and wild native plants, the Canyon is inspired by the landscape directly north of the hotel, designed to appear as though it naturally slid down the hill into its current location.

Beyond aesthetics, 1 Hotel West Hollywood operates as a sustainability trailblazer: it’s the first hotel in Los Angeles certified LEED Silver under the v4 rating system and boasts initiatives like on-site composting, smart irrigation, fully electric Audi Q8 e-tron house cars, and interiors built with salvaged “urban lumber.” Even the front desk is crafted from fallen trees sourced locally.

For elevated Japanese experience of the culinary kind, Teppan Ten-Yu is perfect for guests like me who are looking to relish the finest Wagyu beef. The restaurant savours seasonal ingredients crafted by skilled chefs and, with a backdrop of Tokyo’s skyline, it’s hard not to be clicking on your camera while in this private dining space.
